Zucchini Bread


 

Ingredients

  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan or line it with parchment paper.

  2. Prepare the Zucchini: Grate the zucchini using a box grater or a food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.

  3. Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

  4. Combine Wet Ingredients: In another bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.

  5. Mix Together: Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix. Gently fold in the grated zucchini, and if using, fold in the nuts and raisins or chocolate chips.

  6. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool: Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

  8. Serve: Slice and enjoy! Zucchini bread can be stored at room temperature for a few days, or you can freeze it for longer storage.

Tips

  • Moisture Control: Squeezing the excess moisture from the zucchini is important to prevent the bread from becoming too soggy.
  • Add-ins: Feel free to customize your bread with different add-ins like shredded coconut, orange zest, or even a swirl of cream cheese.
  • Gluten-Free: To make this gluten-free, substitute the all-purpose flour with a gluten-free flour blend.
