Watermelon Salad with Feta and Mint
Ingredients:
- 4 cups seedless watermelon, cubed
- 1 cup cucumber, peeled and sliced
- 1/2 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
- Prepare the Ingredients: In a large bowl, combine the watermelon cubes, cucumber slices, and red onion slices.
- Add Feta and Mint: Gently fold in the crumbled feta cheese and chopped mint leaves.
- Dress the Salad: Drizzle the olive oil and balsamic vinegar over the salad. Season with salt and pepper to taste.
- Toss and Serve: Toss the salad gently to combine all the ingredients. Serve immediately, or chill in the refrigerator for 15-20 minutes to let the flavors meld.
Tips:
- Variations: You can add other fruits like blueberries or strawberries for extra sweetness.
- Herbs: If you don't have fresh mint, basil can be a great substitute.
- Nuts: For added crunch, sprinkle some toasted almonds or walnuts on top.
