Plum Jam


 

Ingredients:

  • 2 pounds ripe plums
  • 4 cups granulated sugar
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon butter (optional, helps reduce foaming)

Instructions:

  1. Prepare the Plums: Wash the plums thoroughly. Pit them and cut them into small pieces. You can leave the skins on for added texture and flavor.

  2. Cook the Plums: Place the plum pieces in a large pot. Add the lemon juice and butter (if using). Bring the mixture to a simmer over medium heat, stirring occasionally.

  3. Add Sugar: Gradually add the sugar, stirring constantly until it is completely dissolved.

  4. Boil the Mixture: Increase the heat to high and bring the mixture to a full rolling boil. Continue boiling for about 15-20 minutes, stirring frequently to prevent sticking and burning. The jam should start to thicken.

  5. Test for Doneness: To test if the jam is ready, place a small amount on a cold plate. Let it sit for a minute and then push it with your finger. If it wrinkles and doesn't run back together, it's ready. If not, continue boiling for a few more minutes and test again.

  6. Jar the Jam: Once the jam has reached the desired consistency, remove it from the heat. Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims clean, place the lids on, and screw on the bands.

  7. Process the Jars: Process the jars in a boiling water bath for 10 minutes to ensure they are sealed properly. Remove the jars and let them cool completely. Check the seals after 24 hours; the lids should not flex up and down when pressed.
