Grilled Lemon Herb Chicken Salad
Ingredients: Chicken breasts, mixed greens, cherry tomatoes, cucumber, red onion, olive oil, lemon juice, garlic, salt, pepper, herbs (like thyme or rosemary)
Instructions: Marinate the chicken breasts in olive oil, lemon juice, minced garlic, salt, pepper, and herbs. Grill until cooked through. Serve over mixed greens with cherry tomatoes, cucumber, and red onion. Drizzle with olive oil and additional lemon juice.
Stir-Fry Vegetables with Tofu
Ingredients: Firm tofu, mixed vegetables (such as bell peppers, broccoli, snap peas, and carrots), soy sauce, ginger, garlic, sesame oil, brown rice
Instructions: Press and cube the tofu. Stir-fry the tofu in sesame oil until golden, then set aside. Stir-fry mixed vegetables with garlic and ginger until tender-crisp. Add tofu back in and drizzle with soy sauce. Serve over brown rice.
Quinoa and Black Bean Stuffed Peppers
Ingredients: Bell peppers, quinoa, black beans, corn, diced tomatoes, onion, cumin, chili powder, cheese (optional)
Instructions: Cook the quinoa. Sauté diced onion until soft, then add black beans, corn, diced tomatoes, and spices. Mix in cooked quinoa. Stuff the mixture into halved bell peppers. Bake at 375°F (190°C) for 25-30 minutes. Top with cheese if desired.
Salmon and Asparagus Sheet Pan Dinner
Ingredients: Salmon fillets, asparagus, olive oil, lemon, garlic, salt, pepper
Instructions: Preheat oven to 400°F (200°C). Place salmon fillets and asparagus on a baking sheet. Drizzle with olive oil, lemon juice, minced garlic, salt, and pepper. Bake for 15-20 minutes until the salmon is cooked through and asparagus is tender.
Zucchini Noodles with Pesto and Cherry Tomatoes
Ingredients: Zucchini, cherry tomatoes, pesto sauce, olive oil, Parmesan cheese (optional)
Instructions: Spiralize the zucchini into noodles. Sauté the zucchini noodles in olive oil for 2-3 minutes until slightly tender. Toss with pesto sauce and halved cherry tomatoes. Top with Parmesan cheese if desired.
