1. Banana Oat Cookies

Ingredients:

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 teaspoon vanilla extract
  • Optional add-ins: dark chocolate chips, nuts, dried fruit

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mash the bananas until smooth.
  3. Stir in the oats and vanilla extract until well combined.
  4. Fold in any optional add-ins.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet and flatten slightly.
  6. Bake for 15-20 minutes, or until the cookies are golden brown.
  7. Let cool before enjoying.



2. Chia Seed Pudding

Ingredients:

  • 2 cups almond milk (or any milk of your choice)
  • 1/2 cup chia seeds
  • 1-2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Fresh fruit or nuts for topping

Instructions:

  1. In a mixing bowl, whisk together the almond milk, chia seeds, maple syrup, and vanilla extract.
  2. Let the mixture sit for about 10 minutes, then stir again to prevent clumping.
  3. Cover and refrigerate for at least 2 hours or overnight.
  4. Stir the pudding once more before serving.
  5. Top with fresh fruit or nuts.




3. Greek Yogurt and Berry Parfait

Ingredients:

  • 1 cup Greek yogurt
  • 1/2 cup fresh or frozen berries
  • 1 tablespoon honey or maple syrup
  • 1/4 cup granola

Instructions:

  1. In a glass or bowl, layer half of the Greek yogurt.
  2. Add a layer of berries and drizzle with honey or maple syrup.
  3. Add another layer of Greek yogurt.
  4. Top with more berries and granola.
  5. Serve immediately.




4. Dark Chocolate Avocado Mousse

Ingredients:

  • 2 ripe avocados
  • 1/4 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions:

  1. Cut the avocados in half, remove the pit, and scoop the flesh into a blender or food processor.
  2. Add the cocoa powder, honey or maple syrup, vanilla extract, and salt.
  3. Blend until smooth and creamy.
  4. Spoon the mousse into serving dishes and refrigerate for at least 30 minutes before serving.



5. Apple Nachos

Ingredients:

  • 2 apples, cored and thinly sliced
  • 2 tablespoons natural peanut butter or almond butter
  • 1 tablespoon honey or maple syrup
  • 1/4 cup granola
  • 2 tablespoons dark chocolate chips or nuts (optional)

Instructions:

  1. Arrange the apple slices on a plate.
  2. Drizzle the peanut butter or almond butter over the apple slices.
  3. Drizzle honey or maple syrup over the top.
  4. Sprinkle with granola and optional toppings like dark chocolate chips or nuts.
  5. Serve immediately.
