Easy 20-minute dinner recipes


 

1. Garlic Butter Shrimp Pasta 🍤🍝

Ingredients:

  • 200g (7 oz) pasta
  • 450g (1 lb) shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 60g (1/4 cup) butter
  • 60ml (1/4 cup) chicken broth
  • 60ml (1/4 cup) white wine (optional)
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, melt butter over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp and cook until pink and opaque, about 3-4 minutes.
  4. Pour in chicken broth and white wine (if using). Cook for another 2 minutes.
  5. Add cooked pasta to the skillet and toss to combine. Season with lemon juice, salt, and pepper.
  6. Garnish with fresh parsley and serve immediately.

2. Chicken Stir-Fry 🍗🥦

Ingredients:

  • 2 chicken breasts, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 bell pepper, sliced
  • 1 broccoli head, cut into florets
  • 2 carrots, julienned
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp olive oil
  • Cooked rice or noodles (for serving)

Instructions:

  1. In a bowl, marinate chicken slices with soy sauce and sesame oil.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add garlic and ginger, and sauté for 1 minute.
  3. Add marinated chicken and cook until browned and cooked through, about 5-7 minutes.
  4. Add bell pepper, broccoli, and carrots to the skillet. Stir-fry for another 5 minutes until vegetables are tender-crisp.
  5. Serve over cooked rice or noodles.

3. Caprese Chicken 🍅🧀

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh mozzarella, sliced
  • 2 tbsp balsamic glaze
  • Fresh basil leaves (for garnish)

Instructions:

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium heat. Cook chicken until golden and cooked through, about 5-7 minutes per side.
  3. Top each chicken breast with cherry tomatoes and mozzarella slices. Cover the skillet and cook until the cheese is melted, about 2 minutes.
  4. Drizzle with balsamic glaze and garnish with fresh basil leaves. Serve immediately.

4. Beef and Broccoli 🥩🥦

Ingredients:

  • 450g (1 lb) beef sirloin, thinly sliced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 broccoli head, cut into florets
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/4 cup water
  • Cooked rice (for serving)

Instructions:

  1. In a bowl, toss beef slices with soy sauce, oyster sauce, and cornstarch.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add beef and cook until browned, about 5 minutes. Remove from skillet and set aside.
  3. Add broccoli, garlic, and ginger to the skillet. Stir-fry for 2 minutes.
  4. Return beef to the skillet and add water. Cook for another 3 minutes until broccoli is tender and beef is heated through.
  5. Serve over cooked rice.

5. Vegetarian Quesadillas 🌮🧀

Ingredients:

  • 4 large flour tortillas
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 cup shredded cheddar cheese
  • 1 avocado, sliced
  • 2 tbsp olive oil
  • Salsa and sour cream (for serving)

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add black beans, corn, and bell pepper. Cook until vegetables are tender, about 5 minutes.
  2. Remove from heat and set aside.
  3. Place a tortilla in the skillet. Sprinkle half with cheese, then top with the bean mixture and avocado slices. Sprinkle more cheese on top.
  4. Fold the tortilla in half and cook until golden brown and cheese is melted, about 2-3 minutes per side.
  5. Repeat with remaining tortillas and filling.
  6. Serve with salsa and sour cream.
