Banana Nut Waffles with Maple Yogurt Topping
Ingredients
For the Waffles:
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 large eggs
- 1 1/4 cups milk (or a milk alternative)
- 1/2 cup mashed ripe banana (about 1 large banana)
- 1/4 cup melted butter (or coconut oil)
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts or pecans
For the Maple Yogurt Topping:
- 1 cup Greek yogurt
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
Optional Toppings:
- Sliced bananas
- Additional chopped nuts
- Maple syrup
- Whipped cream
Instructions
Preheat the Waffle Iron:
- Preheat your waffle iron according to the manufacturer's instructions.
Prepare the Waffle Batter:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat the eggs and then add the milk, mashed banana, melted butter, and vanilla extract. Mix well until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the chopped nuts.
Cook the Waffles:
- Lightly grease the waffle iron with cooking spray or brush with melted butter.
- Pour the batter onto the preheated waffle iron (amount depends on the size of your waffle iron).
- Cook the waffles according to the manufacturer's instructions, usually about 3-5 minutes, until golden brown and crisp.
Prepare the Maple Yogurt Topping:
- In a small bowl, mix the Greek yogurt, maple syrup, and vanilla extract until smooth.
Serve:
- Top the warm waffles with a dollop of maple yogurt topping.
- Add optional toppings such as sliced bananas, additional chopped nuts, and a drizzle of maple syrup.
