Avocado Bread Recipe

Ingredients:

  • Dry Ingredients:

    • 1 3/4 cups (220g) all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
  • Wet Ingredients:

    • 1 large ripe avocado (about 200g), mashed
    • 2 large eggs
    • 1 cup (200g) granulated sugar
    • 1/2 cup (120ml) vegetable oil
    • 1/4 cup (60ml) milk (any type)
    • 1 teaspoon vanilla extract
    • 1 tablespoon lemon juice

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9x5 inch (23x13 cm) loaf pan or line it with parchment paper.
  2. Mix Dry Ingredients:

    • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. Prepare the Avocado Mixture:

    • In a large bowl, mash the ripe avocado until smooth.
    • Add the eggs, sugar, vegetable oil, milk, vanilla extract, and lemon juice. Mix until well combined.
  4. Combine Wet and Dry Ingredients:

    • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  5. Bake:

    • Pour the batter into the prepared loaf pan.
    • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve:

    • Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
    • Slice and enjoy your avocado bread!

Notes:

  • You can add mix-ins like nuts or chocolate chips to the batter if desired.
  • This bread can be stored at room temperature for a few days or refrigerated for up to a week.
