Grilled Lemon Herb Chicken with a Fresh Summer Salad.

 





Ingredients:

For the Grilled Lemon Herb Chicken

4 boneless, skinless chicken breasts
1/4 cup olive oil
2 lemons (juice and zest)
3 cloves garlic, minced
1 tablespoon fresh thyme leaves
1 tablespoon fresh rosemary, chopped
Salt and pepper to taste

For the Fresh Summer Salad

2 cups mixed greens (arugula, spinach, or your favorite salad mix)
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/4 red onion, thinly sliced
1/2 cup feta cheese, crumbled
1/4 cup olive oil
2 tablespoons balsamic vinegar
Salt and pepper to taste

Instructions:

For the Grilled Lemon Herb Chicken:

Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, thyme, rosemary, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes, preferably 1-2 hours.
Grill the Chicken: Preheat the grill to medium-high heat. Grill the chicken breasts for 6-7 minutes on each side, or until fully cooked and juices run clear. Let rest for a few minutes before slicing.

For the Fresh Summer Salad:

Prepare the Salad: In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
Make the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
Toss the Salad: Drizzle the dressing over the salad and toss to combine.
Serving:
Plate the Dish: Serve the grilled lemon herb chicken alongside the fresh summer salad. Garnish with additional lemon slices and herbs if desired.
This light and flavorful meal is perfect for warm summer evenings and is both healthy and satisfying.
